In the USA and other country’s it is already a tradition to celebrate Halloween big time! So as you might know, I am from The Netherlands and Halloween is not that big here, but its becomes more popular every year. We talked about celebrating Halloween now for the first time! Always in for some fun!
My wife and I talked about what we should do, after a little discussion we decided that we wanted to make a cake. But what, which and how? After a bit of time browsing on world wide web I came across of a spooky cemetery cake and we were sold! This should be it!
My chef mind was making over hours right away. As cake base I wanted brownie, this is the easy part since I just make a brownie of a box easy and simple since I make it a day in front and I had to work as well.
Ingredients Brownie cake:
- Oetker Brownie Choco box 2x (+-1kg)
- 100 gr butter (room temperature)
- 200 ml water
Then I needed as layer of ‘ground’ it has to be chocolate of course, so using my favorite; Oreo’s. Before I add this I need something to stick it on so used some ganache on the cake. I used 1 box: 154 gr. Shredded the Oreo’s into little pieces with the food processor.
What else to put on a spooky cemetery cakes? Hmm, I know bones and candy! So up to the candy shop, found some orange lollipops with a skeleton feet!
Still there is something missing right? Yes, how to make a cake spooky? Gravestones and Ghosts! So for the Ghosts, they have to be white. Let me think… Got it! Meringue’s!
- 3 egg whites
- 150 gr. Caster Sugar sifted!
Making Meringue’s are tricky even it is only 2 ingredients recipe, gladly I know my basics. For each egg white of a medium/large egg, you use 50 grams of caster sugar. I always sift my sugar, it will be worth it, believe me.
Beat the egg whites till you can turn the bowl upside down and it stays in the bowl, add the caster sugar and beat till mixed properly. Take an piping bag, or if you don’t have one make one yourself. You can make figures in all sizes you want, for this cake i wanted some big ones about 4-5 cm high.
Pre-heat the oven 100 degrees and bake them exactly 2 hours, after 2 hours turn off the oven and let them sit and cool down in the oven.
Then the Gravestones, I just bought chocolate cookies. Yeah it is chocolate, on chocolate, on more chocolate! I want to write Boo and Rip on the cookies, so need to make some writing icing! Sift your powdered sugar in a bowl, add drops of water while whisking until you have a smooth paste.
Tip: To write or draw lines, hold the bag at a 45 degree angle, a little away from the surface, squeeze the icing out with a constant pressure, and let the line of icing fall naturally into place as you guide it. Try not to pull the piping bag before the icing has met the surface, as you’ll get an uneven thickness.
Last I want to make a walking path, cause there is always one on a cemetery! So again bought a white chocolate bar.
Time to assemble all the parts and pieces.. Just use your imagination!
