Happy Thanksgiving!

Thanksgiving Day is a national holiday celebrated in Canada, in the United States and in some of the Caribbean islands. Originally celebrated as a day of giving thanks for the blessing of the harvest and of the preceding year.

Thanksgiving is celebrated on the fourth Thursday of November in the United States and on the second Monday of October in Canada. Thanksgiving has historical roots in religious and cultural traditions but it has long been celebrated in commercial ways as well.

Most Thanksgiving turkeys are stuffed with a bread-based mixture and roasted. Sage is the traditional herb added to the stuffing, along with chopped celery, carrots, and onions. Other ingredients such as chopped chestnuts or other tree nuts, crumbled sausage or bacon, cranberries, raisins, or apples, may be added to the stuffing

When we have an idea we mostly just make work from it, we are just lucky that our friends put up with us and find it fun to join in. Me as chef, I just go crazy with the food. I love to experiment and try new recipes out and change them to my liking.

2016 Thanksgiving dinner:

This was the first time preparing a whole turkey, I looked for recipes. Finally I got my inspiration of Jamie Oliver food tube. Also used his recipes for the turkey with flavored butter , gravy and stuffing, only adjust the ingredients to my pantry and liking. Then for on the side we choose for roasted Pumpkin, sweet potatoes, glazed carrots and extra stuffing and as dessert my friend made apple crumble pie.

Very satisfied over the out coming, especially since I didn’t cook that big of a turkey or even a whole turkey before.  And everyone enjoyed the Thanksgiving dinner and that for me is the most important. I found the turkey was a bit dry (forgot to wrap the legs properly and didn’t adjust the time from recipe of a turkey of 6 kg to a turkey from 3,5 kg oops) Also the last half hour to crisp the skin the temperature of the oven was to high, so the top was a bit burned and so was the stuffing 🙁 It still was good the flavor was amazing, but I know I could do better then this 🙂

As a chef, I discovered what I can do to take it to the next level next year!

2017 Thanksgiving dinner:

This year I had literally no time to prep or to get groceries on front, worked 5 days in a row. Picked up friends from the airport today in the early morning with big traffic jams took me twice as long as normal, no good start lol. But it is thanksgiving no excuses to not have great food on the table! Only most store bought this year, I could have made it myself if I had the time 🙂

No problem with inspiration this year, already knew what I was going to make like 1 month ago. As Main table piece off course turkey, easy choice right but filet with a crunchy herb crust with a mushroom sauce (turkey store bought this year). As sides I made asparagus wrapped in bacon, roasted sweet potato with garlic and time, roasted veggies (red pepper, orange pepper and zucchini) with garlic and time. As dessert we had stewed pear, banoffee pie and some cookie dough truffles I made last week on the site too as part of the recipe swap club. It was all so tasty!
